Spiced Spatchcocked Chicken
Ingredients
1 whole Chicken
2 tbsp Sterling Yo’great Cooking Yogurt
1 1/2 tsp INDI Ground Paprika
2 tsp INDI Ground Cumin
1/4 INDI Ground Turmeric
1/4 INDI Garam Masala
2 tbsp Sterling Ghee, melted
2 cloves Garlic
1 tsp grated Ginger
2 tsp Tomato Paste
1 tbsp Lemon Juice
1 tsp Salt
Directions
- On a cutting board, place whole chicken on surface. Using a scissors, spatchcock chicken (removing the backbone). Turn chicken over and flatten.
- In a large bowl, add Sterling Yo’great cooking yogurt, INDI ground paprika, ground Cumin, ground Turmeric, Garam Masala, 2 pieces of garlic (crushed), grated ginger, tomato paste, lemon juice, salt, Sterling Ghee (melted) and mix well. Place chicken into bowl and massage, covering all areas.
- Cover and refrigerate for 6-8 hours or overnight to marinate.
- Pre-heat grill to 350 degrees
- Place marinated chicken on preheated grill and cook for 30 minutes
