Egg Muffin
Ingredients
9 eggs
1 Cup Milk
1/4 Tsp INDI Paprika
1/4 Tsp INDI Black Pepper
1 cup chopped onions
2 Tbs Olive Oil or Vegetable Oil
6 Ozs Bacon or Sausage, chopped
6 Ozs Bok Choi (Pak Choy), chopped
2 Tbs Fresh Thyme or 1 Tbs Dried Thyme
1/2 Tbs Lemon Juice, Freshly Squeezed
Pack of Mixed Italian Shredded Cheese or cheese of choice
Salt to Taste
Directions
- Heat oven to 350 degrees. Grease medium size pan with 1 tbs olive oil.
- Add chopped bacon and sauté until cooked. Remove from pan
- Add chopped onions & cook until translucent. Add Bok Choi and sauté until wilted for 2-3 minutes.
- Turn heat off and add lemon juice, thyme & cooked bacon and mix well.
Egg Mixture
- In a large bowl, add eggs and whisked.
- Add milk, paprika, black pepper, shredded cheese and mix until smooth.
-In a cupcake pan, fill each section with sautéed Bok Choi and Bacon & Add Egg Mixture. Top with grated cheese and bake for 20mins until puffed and lightly browned.
Remove from pan, let cool and Serve.
