Cardamom Granola
Ingredients
2 Cups Oats
3/4 Tsp INDI Ground Cardamom
1/2 Tsp INDI Ginger
1/8 Tsp INDI Ground Clove
1/8 Tsp Nutmeg
1 Tsp Salt
1 Tbs Coconut Oil
1 Cup Honey
1 Tsp pure Vanilla Extract
1/2 Cup Unsalted Peanuts
1/2 Cup Walnuts
2 Cups Almond Nuts
1 cup Dried Cranberries (or any dried fruit of your choice).
1 Cup Toasted Coconut Flakes
1/4 Cup Whole Pumpkin Seeds (optional)
Directions
- Pre-heat oven to 275°
- Combine unsalted peanuts, walnuts, almond nuts & pumpkin seeds in a food processor and blend for 15 seconds.
- In a large bowl, add blended nuts, oats, nutmeg, cardamom, ginger, clove, salt, coconut oil, vanilla extract, honey and mix well.
- Spread mixture on a well-oiled baking pan and place into the oven for 20 minutes.
- Stir and rotate granola then place back into oven for 10 minutes, until toasted.
- Turn oven off and leave for another 10 minutes. Remove from oven and let cool.
- Use hands to coarsely break into small chunks. Add dried fruit, coconut flakes and stir to combine.
- Serve & Enjoy.
Granola can be kept at room temperature for up to 2 weeks.
