Beignets with Champion Icing Sugar
Ingredients
1 ½ cups of lukewarm water
½ cups of granulated sugar
1 envelope of active dry yeast
2 eggs, slightly beaten
1 1/4tsp salt
1 cup evaporated milk
7 cups of all-purpose flour
¼ cup shortening
½ tsp Cinnamon
Nonstick spray
Oil, for deep-frying
3 cups CHAMPION ICING SUGAR
Directions
- In a large bowl, add water, sugar, yeast and mix. Allow to sit for 10 minutes
- In a separate bowl, add eggs, milk and salt and beat until smooth.
- Add egg mixture to yeast mixture, 3 cups of flour, shortening and mix well
- Add cinnamon and the remaining flour and continue to mix
- Remove dough from bowl, place onto a lightly floured surface and knead until smooth.
- Place dough in an oiled bowl & cover with plastic wrap or towel. Let rise for 2 hours
- Preheat oil in a deep fryer to 350 degrees F.
- Roll dough out to ¼ inch thickness and cut into 1 inch squares
- Place into hot oil, flipping constantly, until golden brown.
- Drain and let sit for a few seconds
- Add Champion Icing sugar on top to coat evenly and enjoy warm
