No Bake Cheesecake

Ingredients


Crust
2 cups Cardamom Granola (link to Cardamom Granola Recipe)
1/2 cup Coconut Oil

Filling
16 oz. Cream Cheese
175 ml honey
60 ml coconut Oil
1/2 tbs lime juice
1/2 tsp Cardamom Powder
1/2 tsp Indi ground Cinnamon
1 tsp Vanilla
Food colour (optional)
1 pk Gelatin (optional)


Directions


-Preheat oven to 350F.

-In a medium bowl combine premade Cardamom Granola and coconut oil. Stir thoroughly to combine.

-Line with parchment a greased cheesecake pan or a deep tart pan with a removable bottom.

-In a greased pan, spread granola in an even layer and press gently to flatten using the bottom of a cup or a glass jar.

-Place pan in a preheated oven for 10 - 15 minutes and let cool.

-In a large bowl add cream cheese and whisk with an electric mixer until smooth. To this add all other ingredients and whisk to combine until creamy.

-Fill cooled granola crust with the creamy filling and tap lightly to evenly distribute.

-Cheesecake can be placed into the freezer for 2 hours to be enjoyed or to set in the fridge for 6 hours or overnight if gelatin is included.
