Healthy Mac & Cheese

Ingredients


1 Pack Champion Wheels Pasta
300g Pumpkin (peeled and chopped)
200g Carrots (peeled and chopped)
½ tsp INDI Coarse Black Pepper
1 tsp salt
1 tbs extra virgin olive oil
Cheese Sauce
1 oz flour
1 oz butter
¼ tsp INDI NUTMEG
4 cups milk
¼ tsp INDI GROUND BLACK PEPPER
½ tsp salt
8 ozs Mozzarella Cheese
8 ozs Anchor Cheese
1 tbs granulated sugar
Chopped parsley (optional)
Shallots, sliced (optional)
Chopped pepper (optional)
Creamed corn (optional)
Salt to taste.


Directions


-Heat oven to 350° F . Toss vegetable with black pepper, salt, olive oil .Roast for 40 mins to 1hr, stirring at least once or twice during roasting for even cooking and browning. Let cool slightly.
-Meanwhile boil pasta until al dente and drain reserving ½ cup of pasta liquid.

-Add roasted vegetables to a blender along with reserved pasta liquid and puree.

-Heat the butter in a heavy bottomed saucepan over low heat .Add the flour and stir to combine over medium heat until the mixture turns a light golden colour about 6-7 mins

-Meanwhile heat 2 cups of milk just until boil .Gradually add the milk into the flour mixture and whisk constantly until smooth. Bring to a boil and cook for 10 mins stirring constantly until thickened. Add nutmeg, vegetable puree, cheeses, sugar, remaining milk and cooked pasta and stir on low heat until combined. Season with parsley, salt and black pepper and remove from heat. Serve.
