Fish Cutlets with Tomato Cucumber Raita

Ingredients


2 fish Cutlets
2 tbs Extra Virgin Olive Oil
½ tbsp INDI Fish Seasoning
½ tsp INDI Ground Cumin
Tomato Cucumber Raita
4ozs Cherry Tomatoes quartered
1 Cucumber (100g) – seeded, finely diced and squeezed
160 ml Yogurt
½ tsp lemon juice


Directions


- Place fish cutlets in a large bowl

- Add extra virgin olive oil, fish seasoning, ground cumin and mix well to coat fish evenly

- In a separate bowl, add cherry tomatoes quartered, cucumber (diced & squeezed), yogurt, lemon juice and ground cumin. Combine all ingredients and serve with fish

- Heat grill pan, drizzle oil and add fish until golden brown on both sides.

- Serve with Tomato Cucumber Raita
