Ingredients


Coconut Cupcake Ingredients
1 tsp lime zest
½ cup Vegetable oil
¾ cup Coconut flour
1 tsp CHAMPION BAKING POWDER
1 tsp salt
7 large eggs
¾ cup honey
3 tbsp. milk
1 tbsp. Vanilla extract

Zesty lime frosting Ingredients
¾ cup butter, softened
2 cups CHAMPION ICING SUGAR
1 tsp whole milk
2 tbsp fresh lime juice
2 tbsp finely grated lime zest
½ tsp kosher salt


Directions


- Preheat oven to 350 degrees.
- Add lime zest to vegetable oil and let infuse for 20 minutes.
- Then add coconut flour, baking powder and salt to a large mixing bowl and whisk to combine.
- Add all remaining ingredients to bowl and whisk on medium-high, until fully combined.
- Fill into cupcake holders and bake in preheated oven for 15 minutes.
- Let cool before frosting.

Zesty lime frosting

- Combine all ingredients into a mixer and combine until light and fluffy.
- Place into pipping bag and frost cupcakes as desired.
- Garnish with toasted flakes and serve.
