Chicken Chowmein

Ingredients


1 1/2 lbs. Chicken Strips
4 tbsp Vegetable oil, divided
1 1/2 tbsp Cornstarch
1 1/2 tbsp Indi Ginger Powder
1 1/2 tbsp Indi Garlic Powder
1 tbsp Salt
454 grams Champion Chowmein, packet
2 tbsp Sesame Oil
2 whole Onions, chopped
2 whole Carrots, peeled, julienned
3 whole Bell Peppers, deseeded,
julienned, chopped
Chicken Chowmein
1 head Broccoli, chopped
2 tbsp Water
432 grams Sweet Corn Kernels, drained
2 whole Peppers (optional)
2 tbsp Rice Wine or Cooking wine
3 tbsp Oyster Sauce
2 tbsp Soy Sauce
2 tbsp Champion Chowmein Seasoning
3 sprigs Green Onions/Eschallots,
green parts only
Salt, to taste


Directions


- Place chicken strips into a large bowl and season with 4 tbsp vegetable oil,
cornstarch, ginger powder, garlic powder. Set aside
- Bring a pot of water to boil and season with 1 tbsp of salt before adding
noodles. Champion Chowmein should be cooked for 5-6 mins. Drain and set
aside.
- Heat reserved 2 tbsp of sesame oil in a wok over med heat. Add chopped
onions and cook until softened. Add seasoned chicken strips to pan and cook
until opaque. Add julienne carrots and cook for 2 mins before adding bell
peppers, broccoli, and 2 tbsp water. Stir to combine and cover on low heat for 3
mins.
- Remove cover from wok and add corn as well as whole peppers. Increase
heat to med high and add rice wine stirring constantly until liquid has reduced.
Lower heat
- Add cooked Champion Chowmein Noodles to pan along with oyster sauce,
soy sauce and Champion Chowmein Seasoning. Add chopped green onions
and stir until fully combined. Salt to taste and enjoy!
